{Yay} for trying out new wedding gifts. We used some of our wedding gift moo-la ($$) to buy a new crock-pot. I’m not sure I could have made it through another autumn/winter without a new slow cooker. Our old one made me so nervous, I was always afraid it would catch the house on fire. That’s the point of having a slow cooker… put in the ingredients and leave your home, rather than watching it every few minutes, to make sure it’s working properly.
Now, the task of finding a recipe for our first try with the new slow cooker. 🙂
Darrin always, always wants either chili or potato soup. Don’t get me wrong, they’re tasty… but come’on, can we try something less un-predictable?
He finally agreed to a newbie, chicken tortilla soup! A perfect pick for the dreary, cold weekend we had in Ohio.

We doubled the recipe ingredients below to make a big batch. We shared it with my parents and friends while watching football on Saturday. We really enjoyed it, and it tasted great as leftovers!
- 2 boneless skinless chicken breasts
- (2) 10 ounce cans of Ro-Tel tomatoes
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn
- 1 onion, chopped
- (2) 14.5 ounce cans low-sodium chicken broth
- 1 cup of water
- 1 Tbsp garlic powder
- 1 Tbsp chile powder
- 1 Tbsp ground cumin
- 1 Tbsp dried cilantro
- tortilla chips
- sour cream
- shredded cheddar or Mexican blend cheese
- fresh cilantro
Directions:
- Put chopped onion, cans of beans, Rotel tomatoes, corn, chicken broth, water, and spices in crock-pot and stir to mix.
- Put chicken breasts on top of mixture, and make sure they’re at least partly submerged in liquid.
- Cook on high 6-7 hours or low 8-9 hours.
- Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they’ll just fall apart on their own, but sometimes they need some help). Return chicken to crock-pot, stir to combine.
- Top with tortilla chips, shredded cheddar cheese, fresh cilantro and a dollop of sour cream!
