If you read my last post, you’re probably familiar with my newfound obsession with my vegetable spiralizer. I didn’t want to bombard you with another spiralized zucchini recipe.
BUT.
I couldn’t help myself.
It was too good not to share and I’m too impatient to wait. Not to mention… my husband dislikes zucchini and he enjoyed this one! Score.

Head on over to her blog for more detailed information. I’ve just screen shotted {is that a word?} her ingredients and directions. I decided to make this recipe off the cuff so I modified the recipe with the ingredients I had on hand.
- I didn’t have artichokes
- I used Kalamata olives rather than black
- I didn’t have lemon juice, dried basil, or dried parsley on hand
- I used harvarti cheese, rather than provolone
- Salami was not cubed {please look for salami without added nitrates}
- I added more tomatoes
{Seriously} going to make this on a regular basis. It’s also a fabulous dish for potlucks. Get your veggies without bringing a {boring} veggie tray.
