To. die. for.  I absolutely love this recipe and will be adding it to my list of favorites.

Eggs are {quite possibly} one of the healthiest foods for us. Yep. You read that correctly… don’t believe your outdated physician if he/she is still telling you to avoid eggs.

Taken from the 100 Days of Real Food blog, this Breakfast Casserole Bite recipe is exactly what I’ve been searching for. I’m always looking for quick and convenient ways to get protein in at breakfast for my {non-dairy loving} clients. Many people love eggs but lack of time prevents it from happening. Until now!

Rejoice! 🙂 Make these casserole bites ahead of time and freeze. Reheat one (or two) + pair with a piece of fruit= perfect breakfast.

I LOVE these silicon muffin holders. They work so well. Zero mess and reusable. Happy day.

Step 1: Tear piece of whole wheat bread and distribute between wrappers.

Step # 2: Combine eggs, milk, salt, and pepper.

Step# 3: Pour egg mixture over pieces of bread.

Step # 4: Sprinkle with cheese, bacon, sausage, veggies, etc. {I forgot to take a photo of this step!}

Step # 5: Bake at 350 degrees F for 15(ish) minutes.

Ta-da! Delicious.

I think I’ll make these on Christmas morning. Can’t believe I’m already talking about the holidays. I love it. 🙂
