Caprese Grilled Cheese

It was a {B-E-A-U-T-I-F-U-L } Friday in Ohio, today! After work, Darrin and I rode our bikes around Beavercreek. We’re moving soon, and I’m definitely going to miss this cute little town.

I knew I was going to indulge a bit at dinner time… so I needed to burn some pre-dinner calories. 😉

Tonight’s recipe, Caprese Grilled Cheese, was courtesy of Closet Cooking. I’m a big fan of grilled cheese, and wanted to spice mine up with some fresh ingredients.

I downsized the ingredient list to make one sandwich:

  • 2 slices of bread (I used Nature’s Pride Multigrain)
  • 1 Tbsp olive oil
  • 2 Tbsp pesto (I used pre-made Mezzetta Pesto)
  • 2 tomato slices
  • 2 slices of fresh mozzarella
  1. Heat a non-stick pan over medium heat.
  2. Brush the outside of each slice of bread with oil, spread the pesto on the inside, place the mozzarella on the pesto on one slice of bread, top with the tomato, and finally top with the other slice of bread pesto side in.
  3. Grill until golden brown and the cheese has melted, about 2-4 minutes per side.
