Fun Chicken Salad :)

I’m in need of some “fun” chicken recipes to livin’ up my protein intake. Experiment #1: Fun Chicken Salad

Chicken breast=boring to me. In fact, the thought of Tyson frozen chicken breasts make me wanna gag. agh. My dislike for frozen chicken breasts may stem from the fact that Darrin makes them every night for dinner, so I get the pleasure of smelling them. 🙂 yuckie.

If I’m going to eat chicken, it better be tasty and fun. I’m experimenting with fruits, veggies and almonds in my chx salad. No boring, frozen chicken cutlets for this girl. 🙂

Serving Size: 3/4 cup. Makes approximately 14 servings (I had a lot of rotisserie chicken to use up)

Ingredients:

  • Chicken, rotisserie: 4 cups, shredded
  • Greek Yogurt 0% fat (I used Fage): 3/4 cup
  • Light Mayo (I used Kraft Mayo with Olive Oil, Reduced Fat): 1/3 cup
  • Apple (I used Jazz): 1 medium
  • Celery: 3 stalks
  • Sliced Almonds (I used Fresh Gourmet’s Honey Roasted Almonds): 3/4 cup
  • Grapes, cut in half (I used red grapes): 2 cups
  • Shredded Carrots: 3/4 cup
  • Red Onion, chopped: 1/2 cup

Mix all ingredients together. Serve on whole wheat bread, lettuce leaves, or whatever your little heart desires.
