Natalia’s Meal Plan for the Week!

We’re back with our series of weekly meal plans!  Each week, one of the Clem&Thyme dietitians will share what’s on their meal plan for the week. Frequently, clients request meal ideas, so why not share what works for us. I think you’ll soon see that most of our meals are pretty simple. 🙂

This week we’re featuring Natalia!

Natalia is very flexible with her meal planning. She like to brainstorm what she might be in the mood for to have a rough idea of what ingredients she needs to have on hand, but sometimes plans get changed up and they may have leftovers early or do breakfast for dinner. For side salads and toppings (tacos, bowls, etc.) she just uses whatever sounds good in the moment.

Monday-Spaghetti Squash with Chickpea Meatballs – A cozy classic that is a staple in our house come the colder months! We will top with either Kite Hill almond milk ricotta, a homemade cashew ricotta, or raw sharp cheddar cheese. Served with a small simple salad, something like: mixed greens, thinly sliced red onions, green bell peppers Castelvetrano olives, and Tessemae’s green goddess dressing.

Tuesday- Tempeh Taco Tuesday! I mix up the plant-based protein, but we have some form of tacos with Siete tortillas nearly every week. I also mix up the toppings based on what we have in the house, but they usually include: my homemade guacamole, a dollop of Siggi’s full fat yogurt in place of sour cream, greens, radish, shredded carrot, bell pepper, and fresh lime juice.

Wednesday- Leftovers

Thursday- Baked Halloumi with Chickpeas and Greens – I love how quick and easy this recipe is! I like to mix it up and cook with whatever I have on hand. I’ve used kale, mustard greens, and Swiss chard, whatever greens I choose I end up doubling the recipe. I like to do half chickpeas and half cannellini beans. Will enjoy with crusty sourdough bread.

Friday- Instant Vegetarian Stuffed Bell Peppers – A super customizable meal. I like to top with my homemade guacamole and a dollop of Siggi’s full fat plain yogurt. Small simple side salad.

Saturday- Order out! We live in downtown Dayton and have so many fantastic restaurants to choose from. Wheat Penny is in our regular rotation. We will split extra crispy eggplant fries and a small pizza (maybe the Unbeetable or Chimi Picante), I will get the kale salad 2.0 with one or two of the seasonal vegetable sides. We plan for leftovers 🙂

Sunday- Leftovers. Sundays we will either go grocery shopping or I will order a grocery delivery.
