My LEAP Journey, Phase Four

The end is near. Phase 4 (days 18-27) is dunzo and I’m feeling good! 🙂

I even had special treats this weekend… cupcakes from Three Leee Cupcakes! It’s nearly impossible to find cupcakes made without artificial food dyes and preservatives, let alone contain only the foods allowed on my ImmunoCalm diet… but I found a match. hooooray! Three Leee’s Strawberry Lemon cupcakes are made with flour, sugar, unfiltered apple cider vinegar, lemon juice, baking soda, water, soy based butter, fresh strawberries, lemon juice, lemon zest, and confectioners sugar. They were A-M-A-Z-I-N-G, and I really needed the splurge.

Day #18-Friday, May 3rd; New food added: Yellow Squash

  • Breakfast: Red grapes; boiled egg
  • AM Snack: Fresh raspberries
  • Lunch: Salad with romaine lettuce, Kalamata olives (olives, water, salt, red wine vinegar), prosciutto (pork, salt), sunflower seeds, drizzled with olive oil
  • PM Snack:  Fresh strawberries, Strawberry Lemon cupcake, Sweet Potato chips (stone ground corn, sunflower oil, sweet potato, corn bran, evaporated cane juice, sea salt)
  • Dinner: Beef hamburger patty with mayo (soybean oil, whole eggs and egg yolks, cider vinegar, distilled vinegar, lemon juice, water, salt)
  • PM Snack #2: Strawberry Lemon cupcake

Day #19-Saturday, May 4th; New food added: Beer (barley, hops)

  • Breakfast: n/a
  • AM Snack: n/a
  • Lunch: Sweet potato chips; Strawberry Lemon cupcake
  • PM Snack:  Beef hamburger patty with mayo (soybean oil, whole eggs and egg yolks, cider vinegar, distilled vinegar, lemon juice, water, salt); Sweet potato chips
  • Dinner: Wedding Food: strawberries/grapes; roasted chicken; pulled pork (no sauce); beer
  • PM Snack #2: n/a

Day #20-Sunday, May 5th; New food added: Mustard

  • Breakfast: n/a
  • AM Snack: n/a
  • Lunch: Sweet potato chips; Applesauce (apples, water) with cinnamon
  • PM Snack:  Apple with sunflower butter (sunflower seeds, evaporated cane juice, salt), strawberry preserves
  • Dinner: Tuna (tuna, water), Kalamata olives, cucumber, mayo, Dijon Mustard (water, mustard seed, vinegar, wine, salt, citric acid); Yellow squash cooked in olive oil
  • PM Snack #2: n/a

Day #21-Monday, May 6th; New food added: Mushrooms

  • Breakfast: Rice cake(whole grain brown rice, sea salt) x2, almond maple butter (almonds, maple syrup, sea salt)
  • AM Snack: Raspberries (fresh)
  • Lunch: Tuna (tuna, water), Kalamata olives, cucumber, mayo, Dijon Mustard (water, mustard seed, vinegar, wine, salt, citric acid)
  • PM Snack: Sweet potato with brown cane sugar
  • Dinner: Pan fried chicken with olive oil, lemon, and honey; Mushrooms cooked in olive oil
  • PM Snack #2: n/a

Day #22-Tuesday, May 7th; New food added: Cantaloupe

  • Breakfast: Cantaloupe balls; cinnamon sugared almonds (almonds, sugar, cinnamon)
  • AM Snack: Pita chips (wheat flour, yeast, sugar, salt, water, sunflower oil)
  • Lunch: Chicken cooked with olive oil, lemon and honey
  • PM Snack: Boiled egg
  • Dinner: Apple with sunflower butter (sunflower seeds, evaporated cane juice, sea salt)
  • PM Snack #2: n/a
