Heidi’s Simple Vegan Parmesan

“Maybe we should pull dairy out…”

This could be a suggestion from your dietitian if you notice you have discomfort after eating foods containing dairy. It’s not an uncommon problem. Many people experience discomfort after eating dairy – and if you are one of those people, your dietitian will probably suggest you trial going dairy-free – because we want you to feel better!!!

You may already know that dairy is a problem for you, and in your gut you knew we would probably tell you to pull it out – but who wants to give up CHEESE? 🙂

Here’s the thing, you really don’t need to give it up. There are quite a few decent alternatives to dairy products!

We love Elmhurst and MALK nut milks. We are huge fans of Treeline cheese, and Siete’s cashew queso, and Good Food cheese dip. We enjoy throwing nutritional yeast on things like popcorn – but sometimes nutritional yeast doesn’t quite cut it —-

If this is the case for you – try some vegan parmesan! It’s super simple, and extra delicious!

Heidi’s Vegan Parmesan:

All you need is

1/2 c. Roasted, or Raw Cashews (I used roasted and lightly salted because that’s what I had!)

1/2 c. Nutritional Yeast

1/2-1 tsp. salt (not optional – think about how salty parmesan is)

A pinch of black pepper (optional)

A pinch of garlic powder (optional)

And a blender

Pulse this mixture in a blender for just a couple seconds, shake and pulse again until it appears to be a fine powdery texture. DON’T OVERBLEND! If you do – you’ll wind up with like a cashew butter that tastes like cheese – which is honestly also pretty good – but not what you’re going for here!

 

 

Then, put it on everything. Put it on popcorn, on cooked veggies, on lentil pasta, on WHATEVER YOUR HEART PLEASES!

How long does this keep? It should be safe for about a month in the fridge! If you freeze it, you may be able to keep this fresh for longer

I had some steamed organic broccoli/cauliflower with an organic chicken burger and faux cheese! Followed by Lesser Evil Himalayan Sweetness popcorn for dessert because I need my carbs and YUM.
