What I Ate Thursday!

Yep. It’s been four {plus} months since I last blogged. BUT guess what happened in the last four {plus} months? I had a babyyyy! 🙂

Albany Claire was born nine days past her due date, on February 19th at 2:37a. She weighed a whopping 8 pounds+ 8 ounces and was 21.5 inches in length. There are no words to describe my love for her. She’s my everything.

I’m finally starting to get back in my groove. I’m back to work and ready to start blogging again.

Many of my clients ask what I eat, so I thought I’d blog about my meals and snacks for the day. Now… is this to encourage you to eat what I eat? Not necessarily. Each person has a unique genetic makeup, different metabolism and body composition, different activity level, and lifestyle habits.

Disclaimer: I’m exclusively breastfeeding… which means I want (and get to) to eat a house. yes. a house. So… you’ll find… I’m eating often and more than I normally would. yay for breastfeeding! 🙂

Here goes… no judging!

Breakfast: Mixture of Chobani vanilla Greek yogurt and Trader Joe’s vanana (banana vanilla) yogurt + fruit mixture of blueberries, grapes, strawberries, and raspberries + Trader Joe’s honey-roasted slivered almonds

Snack #1: Skinny Pop popcorn. SO much better than gross microwavable popcorn. Just popcorn, oil, and salt.

Snack #2: Baby carrots and Trader Joe’s white bean and basil hummus. I’m usually pretty boring with hummus. My normal go-to is Trader Joe’s Original Hummus without tahini. They were out of my norm, so I stepped outside my comfort zone with the basil flavor. Happy I did, it was yummmmie. 🙂

Lunch: Spaghetti squash covered in homemade sauce (crushed tomatoes, Wildtree seasoning, button mushrooms) and Parmesan cheese. I’d take spaghetti squash any day over regular pasta, but that’s me.

Snack #3: Strawberries, raspberries, grapes, blueberries

Snack #5: Piece of cake at work. Sue’s 45th year of working at MVH! Celebrations call for celebrating, duh! Everything in moderation=my motto.

Dinner: Mixed greens from the garden (so fresh), tomato, roasted salted sunflower seeds, Parmesan cheese, Dorothy Lane Market’s Buffalo Chicken Burger (from the meat counter), Frank’s Red Hot buffalo sauce, and Simply Dressed ranch dressing.
