Beet Salad with Walnuts & Feta

Yep. Yep. My due date was Monday… as in two days ago.

no baby Edmunds yet.

just waiting… patiently. kind of.

I’m still working at Five Rivers until labor begins. Figured I might as well keep working, making that $$. I did, however, stop taking Healthy Hearts clients at the beginning of February,  which means Wednesdays are now free. (or at least free until the baby comes!)

It’s been nice to relax. Today I watched Kelly & Michael, The Today Show, The Chew, The Talk, and now Ellen. 🙂 I didn’t just sit on my bum… I mean…I did work on my taxes, organize my undie/bra drawer (hello nesting?), and return emails. I also organized the fridge (hello nesting?) and decided to doctor up a tasty salad and share with my readers.

Beet Salad with Walnuts, Feta, & Apple

Yields 1 serving

Ingredients:

  • Handful mixed baby greens
  • Baby beets (2), chopped
  • 1/2 apple, sliced. I used a Gala
  • 1/4 cup walnut halves/pieces
  • 1/4 cup feta, crumbled
  • 1T balsamic vinegar
  • 1T Wildtree lemon grapeseed oil
  • 1 T honey
  • 1T Olive Tree white grapefruit balsamic vinegar

Directions:

  1. To make the vinaigrette, in a small bowl whisk together the balsamic vinegars, grapeseed oil, and honey.
  2. Place the salad greens, chopped beets, walnuts, apples, and feta on salad plate.  Drizzle with enough of the vinaigrette to lightly coat, and toss well.
