New Year’s Pork+Kraut+Sweet Potatoes

Oh, what a year 2013 was.

2012 was difficult to top. I married the love of my life and moved back to my hometown. My heart was abundantly overflowing throughout 2012.

2013 was pretty damn good, though. My career soared. Many memories were made with friends & family. AND we got PREGNANT!

2014 is going to be one of those {best year of our lives} years… I can feel it.

I can’t wait to meet our bundle of joy.

Speaking of baby Edmunds… in less than six weeks (hopefully) he (Grant) or she (Albany) will be here! If you haven’t noticed, my blogging took a nose dive when I became pregnant. I was nauseous until week 15 and wanted {absolutely} nothing to do with food. uhhh, that’s really difficult when you’re a dietitian and get paid to talk about food. blah. I don’t have a lot of excuses, as to why I didn’t blog much after week 15… don’t worry… I’m going to get back to it.

As I’m preparing to be a new mommy, I’m trying more crockpot recipes. Time is going to be short (or so they say) so quick meals will be a must.

Eating pork and sauerkraut on New Year’s Day is said to bring good fortune for the year ahead. I’m not one to mess with wives’ tales, so New Year’s Day consisted of doctoring up some slow cooker pork + kraut’. Oh, and I love sweet potatoes with anything so I added a few of those…Oh and I love apples with sweet potatoes, so I added apples, too! ha.

Hope this dish brings you good fortune in 2014. 🙂

Ingredients:

  • Boneless pork chops (1-1.5 lbs)
  • 1 can of sauerkraut (15 oz)
  • Sweet potatoes (2), diced
  • Apple (1), diced
  • Chicken broth (3/4 cup)
  • Salt +pepper to taste

Directions:

  1. Toss it all in the crockpot and cook on low for 8 hours.

Not the prettiest dish I’ve cooked, but one of the tastiest. 🙂

Makes incredible leftovers for lunch. yummmm.
