Yep, I’m in love with Clean Eating Magazine. The latest issue contains so many {yummie sounding} recipes I don’t know where to begin.
…but I finally narrowed it down, and started on page 16, with Curried Apple Chicken and Sweet Potatoes.
I’m a big fan of slow cooker (crockpot) recipes. Little effort goes into these delicious meals + they’re perfect for tenderizing tough meats. Toss the ingredients in, turn on low for 6-8 hours, and come home to a savory meal! Many of my {crazy-busy moms} clients rely on crockpot meals to save their sanity and provide healthy, well-balanced meals for their families.

Curried Apple Chicken and Sweet Potatoes
Lightly adapted from Clean Eating Magazine; Serves 4
Ingredients:
- 2 sweet potatoes, peeled and cut into 1-inch chunks (I didn’t peel mine)
- 1/2 cup chopped yellow onion
- 16 oz boneless, skinless chicken breast
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 2 cloves of garlic, minced (I left out)
- 1 cup applesauce
- 1 Tbsp honey
- 2 tsp apple cider vinegar
- 1 tsp curry powder
- 1/2 tsp ground ginger (I left out)
- I added 3 stalks of celery (chopped) and 1 apple (chopped)
Directions:
- Layer sweet potatoes, onion, chicken, salt, pepper and any other additions (celery, apples, etc) in slow cooker
- Combine garlic, applesauce, honey, apple cider vinegar, curry powder and ginger in a small bowl
- Spoon applesauce mixture over chicken
- Cook on low for 6-7 hours, until cooked through
- Enjoy 🙂
