Homemade Granola Bars

We all want the convenience of packaged granola bars… but many of us don’t want the preservatives & artificial flavors/colors that {usually} go along with them.

If there’s no time for homemade goodies, I tend to rely on Lara Bars for an on-the-go (unprocessed) snack. These Chocolate Coconut Almond Balls are similar to the Lara Bar taste and pretty darn good too!

My friend Andrea sent me this awesome recipe for homemade granola bars. I love when readers recommend recipes they enjoy… share the love, people! 🙂

Homemade Granola Bars

Ingredients:

  • 2c. rolled oats
  • 1c. quick oats
  • 1/2t cinnamon
  • 1/8t salt
  • 1/2c raw almonds (I used sliced honey-roasted almonds)
  • 1-1.5T olive oil
  • 1/3c pure maple syrup
  • 1/4c honey
  • 1/4c vanilla almond milk (I used skim milk)
  • 1/4c shredded coconut
  • 1/2c dried cherries or other dried fruit you like

Directions:

  1. Preheat oven to 350 degrees
  2. Process 2 cups rolled oats in food processor until flour-like.  Mix “oat flour” with dry ingredients.
  3. Add wet ingredients and stir until well combined.
  4. Spray small baking dish (I use 8×8) with non-stick spray, add mixture, and press down with spatula.
  5. Bake 15-20 minutes.
  6. Cool & cut into bars
