Arugula Pizza

My top 5 favorite foods… {if calories don’t count}

1. Chocolate   2. Pizza    3. Mac-n-cheese    4. Guacamole (homemade, only made by Darrin G. Edmunds. I know, I’m damn picky)    5. Cheese.

Oh I forgot sushi. Maybe I just love food.

It’s no secret that I could eat pizza everyday, but rather than eating greasy pizza from restaurants & fast food, I try to make “healthy” pizzas at home.

You (really) can make “pizza” anything. Add pizza sauce, veggies and top with cheese. deliciousness.

Just to name a few.

I regularly make mini pizzas for lunch. I usually use sandwich slims, English muffins, tortillas, or bread for the crust.        Well…I had none of the above, so I concocted my own pizza masterpiece, using pita bread.

and I believe it was the best homemade pizza yet.

Ingredients:

  • Pita Bread (I used Trader Joe’s 100 calorie whole wheat pitas)
  • Pizza Sauce or Pesto  (if you wanna be extra healthy, make your own sauce; I used Trader Joe’s)
  • Shredded Mozzarella Cheese
  • Veggies (I used mushrooms and peppers)
  • Arugula
  • Parmesan Cheese for sprinkling on the final product

Directions:

  1. Preheat oven to 400 degrees F
  2. Spread pizza sauce or pesto on pita bread (I made one of each, pizza sauce and pesto)

3. Top with veggies of choice

4. Load the pizzas with shredded mozzarella cheese

5. Bake pizzas for 10-15 minutes

6. Finish with arugula and Parmesan cheese on top!
