i love Sundays.

football, and now basketball. sleeping in. cooking up recipes I’ve wanted to try—-> like the recipes below. spending time with family. these are a few of my favorite Sunday things.

Apple, Brie and Honey Open-Faced Goodness

Ingredients:

  • Baguette, cut into slices (I used Trader Joe’s French Baguette)
  • 6 to 8 ounces brie (I used pre-sliced Trader Joe’s Brie)
  • Apple ( I used an organic Fuji)
  • 1/4 cup sugared nuts (I used Trader Joe’s cinnamon almonds)
  • Honey for drizzling

Directions:

  1. Preheat oven to 425°F
  2. Lightly spray or brush baguette slices with olive oil and place in a single layer on a baking sheet. Toast until light browned, flipping once halfway through
  3. Remove baguette slices from oven. Top each with a slice of brie and continue baking until brie melts.
  4. Top with thin apple slices and chopped nuts. Drizzle with honey. Enjoy!


Next up! Apple, Cheddar and Turkey Open-Faced Goodness

Ingredients:

  • Baguette, cut into slices (I used Trader Joe’s French Baguette)
  • Extra virgin olive oil, for brushing
  • Roasted turkey breast, 6 ounces ( I used Trader Joe’s Sliced Roasted Turkey Breast)
  • Small apple
  • 4 slices cheddar cheese (I used Trader Joe’s Sliced Lite Cheddar Cheese)
  • 2 Tablespoons Dijon mustard (I used Annie’s Naturals Organic Dijon Mustard)
  • 2 Tablespoons honey

Directions:

  1. Brush both sides of bread slices with oil then broil for 1-2 minutes per side, or until golden brown.
  2. Stir together mustard and honey in a small bowl then spread on each toasted bread slice.  Ever made homemade honey mustard dressing? This was so easy, and so good.

3. Top with turkey, apple slices, and 1/2 slice of cheese. Broil for 2-3 minutes, or until cheese has melted.

4. Yummmmmmm. These are great as leftovers too!
