I’m Back!

Yes… all of my loyal readers probably realized I haven’t posted since July 11th (gasp), exactly one month before our BIG day. Yes…that’s when sh*t got crazy, and I had to take a break from “nutrition stuff”.

What have I been doing the last two months?

  • Darrin and I sold our home in Beavercreek (yay), and had to be out of that house by June 8th
  • We moved in with my parents in the meantime
  • We closed on our new home June 28th

  • We spent all of July and early August remodeling our new home
  • We moved into our new home August 4th
  • Just in time to get MARRIED on August 11th 🙂 🙂 🙂

It’s been a cr-a-zy few months, but I wouldn’t have traded it for the world. We have a new forever home, perfect timing for our forever love.

Okay… so back to nutrition.

So life is still a little bonkers, so dinner was quick last night:

  • Romaine lettuce
  • Cherry tomatoes
  • Shredded cheddar
  • Hard-boiled egg
  • Trader Joe’s shredded bbq chicken
  • Sunflower seeds
  • Topped with a little bit’a poppy-seed dressing

It’s no secret that I’m a huge fan of TJ’s (Trader Joe’s)… so some of my new favorite products:


Can I explain to you how much I dislike peeling hard-boiled eggs? I always miss a few pieces and end up chomping on egg shells..ewwy.

SO…when I saw hard-boiled PEELED eggs at TJ’s,  I practically grabbed every bag off the shelf, until I noticed they had to be eaten within 7 days. 🙂

Onto my next find: Trader Joe’s shredded bbq chicken. Wholy, easy and yummy. 1/3 of the package provides 140 calories, 1 gram of fat, 15 grams of carbs, and 18 grams of protein.
