Grilled Chicken & Pineapple Quesadillas

Recently, I’ve been on this “kick” of incorporating fruit into my chicken dishes. See Fun Chicken Salad for another chicken+fruit combo.

I didn’t follow a recipe with this one… just threw a bunch of ingredients together and wa-la…yummie Chicken Pineapple Quesadillas! 🙂

Makes two quesadillas:

  • One chicken breast, (I used HarvestLand brand—-> no hormones & cage free)
  • 2 cups (frozen) Onion/Pepper Blend (I used Kroger frozen 3 Pepper/Onion Blend)
  • 1 cup Pineapple tidbits (I used canned tidbits in their own juice)
  • 2 Tortillas (I used La Tortilla Factory, Low-Carb High-Fiber Wraps)
  • 1 cup grated cheddar cheese (I used Kroger Sharp Cheddar block, then grated)
  • Cooking spray
  1. Cook chicken breast in skillet over medium-high heat
  2. Cook onion/pepper blend in skillet until sauteed
  3. Dice cooked chicken breast
  4. Spoon diced chicken, sauteed onion/peppers, pineapple, and cheese over one tortilla
  5. Top with the other tortilla
  6. Place tortilla in skillet and cook until browned on both sides, and cheese is melted
  7. Cut in half and enjoy with your favorite toppings 🙂
