Banana Oatmeal Chocolate Chip Cookies

As many of you know, my best friend (Kara) moved to Illinois last summer. 🙁 Our schedules have been super hectic, and I haven’t been able to visit her & Jon until THIS weekend! woop. woop. Since they’re hosting me for the weekend, I thought I’d bake them some yummie cookies, as a thank you. I wanted to try a semi-healthy cookie recipe, as Kara and I have bridal gowns to squeeze into in 3 & 6 months! yayyy!

My college chum, Natalie, informed me of this to-die-for recipe from Carrots ‘N’ Cake, so I figured I’d give it a whirl.

  • 1/2 cup whole wheat flour
  • 1 cup oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1 tbsp ground flaxseed meal
  • 1/4 cup agave nectar (or honey)
  • 1/4 cup soy milk (or other milk)
  • 1/2 tsp vanilla extract
  • 1 tbsp canola oil (or 1 tbsp unsweetened applesauce)
  • 1 ripe banana
  • 1/2 cup chocolate chips
  • 1/4 cup walnuts
  • Pinch of salt
  • I also added 1/3 cup dried cranberries

You may add raisins, cranberries, almonds, peanut butter or whatever your little heart desires to make these cookies how you want them.

1. Preheat oven to 350*F.

2. Combine all ingredients in a large bowl. Mix well until batter is blended evenly.

3. Use a tablespoon to portion cookies on a greased baking sheet, approximately 1-2 inches apart.

4. Bake cookies for 10-12 minutes.

5. Remove cookies from baking sheet and allow to cool on wire rack.

6. Enjoy!

Hopefully I make it to DeKalb without eating all of the cookies myself 🙂

Have a great weekend, everyone!
